The Black Uncinatum Truffle (Tuber uncinatum), also known as the Burgundy Truffle, is a culinary gem celebrated for its rich, earthy aroma and robust flavour. Harvested from September to December in the forests of Italy and France, this truffle elevates a variety of dishes with its distinctive character.

The exterior of the Black Uncinatum Truffle is dark and rough, resembling a small, knobby lump of coal. When cut open, the flesh reveals a marbled interior with shades of light to dark brown, crisscrossed by white veins.

    How it’s used:

    • Pasta and Risotto: Shave raw truffle over freshly prepared pasta or risotto to infuse the dish with its deep, earthy essence, transforming simple recipes into gourmet experiences.
    • Meat Entrées: Enhance the flavours of steak, roasted poultry, or fish by adding thin truffle slices just before serving, providing a luxurious finish that delights the palate.
    • Egg Dishes: Incorporate truffle shavings into scrambled eggs, omelettes, or on a top sunny side up egg.
    • Cheese Pairings: Combine with creamy cheeses like Brie or Taleggio to craft indulgent appetizers or enrich sauces, adding depth and sophistication to your culinary creations.

    Cooking Tips:

    • Heat Sensitivity: To preserve its unique aroma and flavor, add the truffle as a finishing touch to warm dishes, avoiding prolonged exposure to high heat.
    • Infusion: Consider infusing truffle slices in oils or creams to capture its essence, which can then be incorporated into various recipes for an added layer of luxury.
