Sevruga caviar comes from the Starry Sturgeon, a small sized species which rarely exceeds 25 Kg (55 lbs.). It can be found in the Black Sea, the Caspian Sea, the Azov Sea and in the respective tributaries, and it is also in the Aegean Sea and the eastern Ionian Sea. It’s a full-bodied caviar with a fresh silky taste (yolk). It requires 9-12 years of the sturgeon life cycle and is extremely delicate to breed. Time required to harvest is 8 years.
