The same species as the prized European Périgord truffle, Australian black truffles are cultivated in rich, cool-climate regions and celebrated for their extraordinary aroma and depth of flavour. With a dark, textured exterior and a deep black interior veined with delicate white marbling, they offer an intense, musky scent—earthy and complex, with notes of garlic, hazelnut, dark chocolate, and subtle hints of violets or vanilla. These seasonal delicacies are precious and highly perishable.

Storage

Store in the fridge wrapped in paper towel inside an airtight container, changing the towel daily. Best enjoyed within 3 to 5 days.

Timing

Harvested during the Australian winter—from June through August—they arrive at their peak when European truffle season is dormant.

Cooking Tips

Truffles are best used as a finishing touch. Excessive heat can diminish their distinctive aroma and flavour, so add them to dishes just before serving.

To fully capture their essence, infuse truffles in oils, creams, or even eggs for a subtle yet rich flavour in various recipes.
