This vinegar is made with the juice of Minus 8 ice grapes. Several varieties of premium grapes are hand-picked at five intervals, beginning in August (sourest) and usually ending in January at the ice harvest (sweetest). We select grapes that are naturally frozen on the vine and press them while they are still frozen. The juices are blended by taste. Please note that while the quality of our verjus is consistently high, they are small-batch agricultural products subject to slight variations due to the changing character of the vintage each year. This is enjoyable when served lightly chilled and would make a great condiment, adding a wonderful dimension to your cooking repertoire.
