Bottarga is a delicious product obtained from some species of mullet roe (in some cases tuna roe) that are extracted, salted and air-dried naturally, using traditional methods which have been known in Sardinia for thousands years.
It’s a perfect appetiser accompanied by bread or croutons, delicious in pasta and risotto, dishes.
